How Decaf Is Actually Made

One of the biggest reasons decaf got its bad reputation is older decaffeination methods, which used chemicals that could strip a bean of its flavor along with its caffeine. Modern processes have come a long way from that. 

Today, two of the most widely respected methods are the Swiss Water Process and the CO2 method. The Swiss Water Process uses only water and activated charcoal filters to draw out caffeine while preserving the bean's natural flavor compounds. The CO2 method uses pressurized carbon dioxide to target caffeine molecules specifically, leaving the rest of the bean's character largely intact. 

Neither uses harsh chemicals. Both result in a bean that still has something to say.
